foodie 06: banana bundt cake

I buy bananas with the intention of letting them get brown, because I love banana bread. I love it so much that I usually eat the whole loaf by myself and get quite upset if I don't get the last slice. This recipe is a little different and varies in ingredients from a banana bread, but it is still so delicious.

Ingredients:
2 cups all-purpose flour
1 cup whole wheat flour
2 teaspoons baking soda
1/2 teaspoon salt
2 sticks butter, room temperature
2 cups granulated sugar
2 teaspoons pure vanilla extract
2 large eggs
1 1/2 cups mashed ripe bananas ( about 4 )
6 oz. container vanilla yogurt

Directions:
Preheat oven to 350°F and generously butter your bundt pan. In a large bowl, whisk together all-purpose flour, wheat flour, baking soda, and salt. In a stand mixer, beat the butter. Add the sugar and beat until light and fluffy. Add vanilla and then eggs. Add bananas. Lastly add half the dry ingredients, then the yogurt and the rest of the dry ingredients. Transfer the batter to the pan and bake for 45 minutes.

I made more batter than my little bundt pan could hold so I used a round pan as well. My cakes took the whole 45 minutes but be sure to keep an eye on them and check the middle with a toothpick!

These cakes only lasted us a few days. It was that good! I have a few ripe bananas just waiting to be turned into a cake so talk to you later... !!

  3. Banana bread is one of my favorite things!! I made a chocolate chip banana bread the other weekend with my friend and it didn't last long! This bundt cake looks awesome! Love your blog btw - you have such great photography! xo
