Foodie 03: Spice-rubbed Tilapia

foodie03 This a really quick and simple recipe that I threw together in less than 5 minutes. All you need is tilapia and 5 spices. I am sure you could mix and match with a variety of spices and probably even different types of fishes. Just experiment!farmersmarket
Ingredients:
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon oregano
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tilapia fillets

Directions:
In a small bowl, mix together the chili powder, cumin, oregano, salt and pepper. Rub both sides of tilapia with the mixture. Coat baking dish in oil. Bake fish at 375°F for 25 minutes.

Although I baked the fish, you could easily grill it or cook it in a skillet. I just prefer my fish baked. It's easier to control and I can prepare other items while it's cooking. We served ours with fresh green beans and white rice, but I'm thinking it would be really good as fish tacos too. I love a good recipe with lots of options!
