Foodie 01: Honey Lime Chicken

Today, we have the first installment of foodie - my new series where I share a recipe of my liking with you. First up is honey lime chicken. I have never cooked with lime before so I was looking forward to trying this one out.

foodie01 Ingredients:
1/8 cup of extra virgin olive oil
zest + juice of one lime
1 tablespoon honey
1/4 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/2 freshly cracked black pepper
1 pound of chicken breast tenderloins

Directions:
Clean chicken tenderloins - cutting off fat, rinsing, and patting dry with a paper towel. In a large ziploc bag, combine all ingredients ( except for the chicken ). Seal bag completely and mix well. Next add chicken to the bag, reseal, and turn to coat. Allow to marinade for at least 20 - 30 minutes; overnight is even better. Heat grill ( indoor or outdoor ) to medium high. Grill for about 4 minutes on each side or until juices run clear.

You can, of course, increase or decrease anyone of the ingredients based on your palette. I think next time I might add a little more cayenne pepper for more of a kick. This is a versatile dish and can probably be paired with almost anything - on top a salad, shredded up for tacos or fajitas, in pasta or like we did with rice and a veggie. I can definitely foresee this becoming a staple in our house!

  1. Oh, this looks so good! I don't normally cook meat, but I've been wanting to more lately. Honey lime chicken sounds right up my alley :)
